VEGETABLE TURKEY STUFFING 
1 pkg. carrots, grated
3 celery knobs, grated
3 onions, chopped
3 tbsp. butter
2 eggs, beaten
1/2 c. matzoh meal
1/2 c. water
Salt, ginger, fresh cut parsley to taste

1. Saute onions in butter.

2. Toss onions with carrots and celery in large bowl.

3. Mix together eggs, matzoh meal, water, salt, ginger and parsley in separate bowl.

4. Combine everything. Stuff turkey and/or bake in separate dish, basting with turkey juice.
