CREAM PIE FILLING 
1/4 c. cornstarch
2/3 c. sugar
1/4 tsp. salt
2 c. scalded milk
3 egg yolks, beaten
2 tbsp. margarin
1/2 tsp. vanilla

Mix dry ingredients in bowl. In top of double boiler, scald milk. Gradually add dry ingredients. When mixture thickens, add small amount to egg yolks, then all to milk mixture. Cook about 2 to 3 minutes until quite thick. Stir in butter and vanilla.

This can be made in the microwave. Be sure mixture is thick before adding eggs. Stir every 30 seconds after adding eggs.

Variations of Cream Pie.

Banana:

Slice 3 bananas in shell

Chocolate:

Increase sugar to 1 cup, melt 2 (1 oz.) squres unsweetened chocolate in scalded milk.

Coconut:

Add 1 cup moist coconut to filling and 1/2 cup toasted coconut for topping.

Pour cooled filling into cooled pie shell (must be cool for Cool Whip). Top with Cool Whip to your liking. Keep in refrigerator.

Since microwave ovens vary in power, you may need to adjust your cooking time.
