ORANGE CAKE | |
"A very easy cake akin to a light fruit cake. Good family dessert." 1 lg. California orange 1 c. raisins 1/2 c. shortening 1 c. sugar 2 beaten eggs 2 c. flour 1 tsp. salt 1 tsp. baking soda 1 c. milk Chopped nuts Cinnamon Sugar Squeeze juice from the orange and reserve. Grind the orange skin with the raisins through a food chopper. Cream shortening, add sugar. Add eggs. Add flour, salt and soda, which have been sifted together, alternately with milk. Fold in raisin-orange mixture. Bake in greased tube pan at 350 degrees for 40 minutes. Remove from pan and cool. After the cake has cooled, pour the reserved juice over the top. Sprinkle with nuts, cinnamon and sugar. Preparation: 15 minutes. Cooking: 45-50 minutes. Easy - can do ahead. Serves 12. Can freeze. |
