GROUND BEEF VEGETABLE SOUP 
2 lbs. (double) ground beef
1 onion, chopped
1/4 c. chopped celery
1/4 c. chopped bell pepper
2 cans tomato soup
1 lg. can V-8 juice
2 tbsp. beef bouillon granules
1 lg. pkg. frozen mixed vegetables
1/4 c. Minute rice
1 sm. can kernel corn
Salt, pepper, garlic to taste

Brown meat, drain off fat. Add onion, bell pepper and celery. Let brown 10 minutes longer. Add tomato soup and V-8 juice. Sprinkle beef granules over mixture, season to taste. Simmer on low 15 minutes. Cook frozen vegetables until tender. Add to meat mixture with water from vegetables. Sprinkle rice over mixture. Add corn. Simmer a little longer. May be frozen.

I made this for supper last night and it was good. I did add some garlic powder and some Worcestershire sauce to give it more flavor but I thought it was good. Also, I didn't prepare the veggies separate. I put them in the soup to cook and simmer. I'm hoping that it will taste even better today as leftovers!
