PINEAPPLE UPSIDE DOWN CAKE 
2 eggs
2/3 c. sugar
6 tbsp. pineapple juice
1 tsp. vanilla
1 c. flour
1/2 tsp. baking powder
1/4 tsp. salt
1/3 c. butter
1/2 c. brown sugar
Pineapple slices
Cherries for garnish
Pecan halves for garnish

Mix together eggs, sugar, pineapple juice, vanilla, flour, baking powder and salt. Melt 1/3 cup butter in heavy skillet. Sprinkle with brown sugar. Arrange pineapple slices and garnish with cherries and pecan halves. Pour batter over pineapple. Bake at 350 degrees for 45 minutes.
