IMPOSSIBLE COCONUT PIE 
2 c. milk
4 lg. eggs
3/4 c. sugar
1/2 c. biscuit mix
1/4 c. butter, melted
1 tsp. vanilla
1/2 c. flaked coconut

In an electric blender at high speed, swirl together all the ingredients, except the coconut, for 3 minutes. Turn into a buttered pie plate, sprinkle with coconut. Plate will be very full. Carefully place in a preheated 350 degree oven and bake until a knife inserted in center comes out clean about 45 minutes. Serve lightly warm or chilled.
