IMPOSSIBLE COCONUT PIE 
2 c. sugar
4 eggs, beaten
1/2 c. flour
Pinch of salt
1 tsp. vanilla
7 oz. coconut
2 c. milk
1/2 stick butter, melted

Mix eggs with sugar. Add flour, salt, and vanilla. Mix in coconut, gradually add milk into batter (it will be very thin), then add melted butter. Pour into a buttered 10 inch pie plate. Bake at 300 to 325 degrees approximately 40 to 50 minutes. It will have a golden top when done.
