FRESH SALSA 
1/3 green pepper
1/2 onion
1 jalapeno
1 Anaheim chile
2-3 tomatillos
1/8 cup lemon juice
1 tsp salt
6-8 Roma tomatoes (or 3-5 larger variety)
4 garlic cloves
3-5 sprigs cilantro

Chop ingredients into a food processor and mix together. For mild salsa, remove the seeds from Anaheim and jalapeno.

Note: If you like chunky salsa, chop tomatoes by hand.

Add salt and lemon juice to taste and if it's not hot enough for you, you can add a splash of hot sauce.
