WORLD'S SIMPLEST CAMP CHICKEN,
WITH ROTELS
 
3 large frozen chicken breasts (boneless, skinless)
One small can of Rotel tomatoes (any style)

Place chicken breasts into a small skillet or sauce pan. Pour Rotel tomatoes over chicken. Place over medium/low heat until tomatoes just start to bubble. Reduce heat to the lowest setting that still allows for a little bubbling. Cover pan with a well fitting lid.

You are, of course, looking for an internal temperature of at least 165°F, but since we're steaming chicken in Rotels here, a little extra time on the heat won't hurt anything. Cut chicken breasts into bite-sized pieces and return to pan. Allow chicken to absorb a bit of the juices and then serve over pasta.
