YEAST ROLL 
1/2 c. yeast
2 1/4 qts. water
1 1/2 c. sugar
1/3 c. salt
2 lbs. shortening
1 1/2 c. dry milk
7 lbs. flour
1 egg

Put yeast, sugar and salt in lukewarm water, then let stand for 3 minutes, then add shortening, flour, milk and 1 egg; mix well. Let it rise then pinch rolls, let rise again. Bake at 350 degrees until brown, then butter top. Yield: 50 rolls.
