MA MA'S COCONUT POUND CAKE
(CARRIE BRISTER)
 
1 1/2 c. shortening
5 eggs
1/4 tsp. salt
3 c. cake flour
1 c. coconut
2 1/2 c. sugar
1 c. sweet milk
1 1/2 tsp. coconut flavoring
1 tsp. baking powder

DO NOT USE BUTTER IN THIS RECIPE. Cream shortening and sugar. Add eggs, one at a time, beating well after each. Add milk and flavoring. Add dry ingredients, beat well; fold in coconut. Bake 1 1/2 hours at 300 degrees in large tube pan. (I use 1 cup Crisco and a stick of good butter instead of 1 1/2 cups shortening.) Use angel flake coconut.
