ZUCCHINI POTATOES 
1 med. zucchini, chopped
1 med. onion, chopped
8-10 mushrooms, chopped
2 eggs
4-5 tbsp. Bisquick
3 tbsp. Parmesan cheese

Chop vegetables. In medium bowl mix vegetables with beaten eggs until moistened. Add Bisquick and Parmesan and stir until vegetables are coated. Drop by spoonfuls into skillet and fry on both sides in little bit of shortening until golden brown.
