HAWAIIAN OATMEAL COOKIES 
1 c. flour, sifted
1 tsp. baking soda
1/2 c. shortening
1/2 c. brown sugar
1/2 tsp. vanilla
1 c. coconut, (add nuts, raisins, etc.)
1 tsp. baking powder
3/4 tsp. salt
1/2 c. sugar
1 egg
1 c. rolled oats

Cream shortening and sugar, add egg, beat well. Add vanilla and dry ingredients. Add oats and coconut. Mix well, shape into balls and place on ungreased cookie sheet. Bake at 350 degrees approximately 12 minutes.
