HAWAIIAN OATMEAL COOKIES 
1 c. sifted flour
1 tsp. baking powder
1 tsp. baking soda
3/4 tsp. salt
1 egg
1/2 c. shortening
1/2 c. sugar
1/2 c. brown sugar
1/2 tsp. vanilla
1 c. rolled oats
1 c. coconut

Cream shortening, add sugars and beat until light and fluffy. Add the egg, and the vanilla and blend. Add sifted dry ingredients to creamed mixture. Then add rolled oats and coconut and mix until well blended. Shape into balls, place on ungreased cookie sheet and bake in 350 degree oven for 12-15 minutes.
