ONION SHORTCAKE 
1/4 c. butter
1 lg. onion, sliced
1 1/2 c. (8 oz. pkg.) corn muffin mix
1 egg, beaten
1 c. (8 oz. can) cream style corn
1/4 tsp. Tabasco
1 c. sour cream
1/4 tsp. salt
1 c. grated Cheddar cheese

Preheat oven to 425 degrees. Melt butter in a skillet. Add onion and saute until tender. Set aside. Combine muffin mix, egg, corn, and Tabasco. Pour into a greased 8 inch pan. Mix sour cream, salt, and 1/2 cup of cheese with onion. Spread over batter. Sprinkle with remaining cheese. Bake 35-45 minutes. Serve warm. A good alternative to potatoes with beef or pork.
