AUNT FANNY'S BAKED SQUASH 
3 lbs. yellow summer squash
1/2 c. chopped onion
1/2 c. cracker meal or bread crumbs
1/2 tsp. black pepper or to taste
2 eggs
1 stick butter
1 tbsp. sugar

Wash and cut up squash. Boil until tender, drain thoroughly, then mash. Add all ingredients, except half of butter, to squash. Melt remaining butter. Pour mixture into baking dish, then spread melted butter over top of squash and sprinkle with cracker meal or bread crumbs. Bake in 375 degrees for 1 hour or until brown on top. If prepared ahead of time, or if preparing two casseroles, freeze before baking, taking out as needed, and bake.
