PARTY BARBECUED BRISKET | |
5-7 lb. well trimmed brisket 1/4 bottle Wright's Liquid Smoke 1 tsp. Worcestershire sauce Celery salt Onion salt Garlic salt Barbecue sauce Preheat oven or Bar-B-Q grill to 300 degrees. Sprinkle brisket with all ingredients, except barbecue sauce, and rub well into meat. Cover tightly with aluminum foil. Bake for 4 1/2 to 5 hours at 300 degrees. Remove foil and cover with barbecue sauce. Return to oven and bake for another 1/2 hour. Hot brisket does not slice well. Best if cooked a day ahead, chilled thoroughly and then sliced very thin. For serving, return slices to juice and sauce. Cover with foil and reheat. 6 1/2 pounds of meat serves 20. |
