ZUCCHINI MAPLE BREAD | |
3 c. shredded zucchini 1 c. sugar 1 c. brown sugar 2 eggs, beaten 1/2 c. oil 1/2 c. maple syrup 2 tsp. vanilla 4 c. flour 1 tsp. salt 1 tsp. baking powder 1 tsp. pumpkin spice 1/2 c. chopped nuts or dates Mix first 7 ingredients until smooth. Then add the remaining dry ingredients sifted together. Stir in nuts or dates. Pour into 2 greased 8 x 4 x 2 inch pans and bake at 325 degrees for 65 to 70 minutes until done. Cool 10 minutes in pans. Then remove for additional cooling on wire racks. |
