SUMMER ZUCCHINI WITH BEEF
SKILLET
 
1 lb. ground beef or sausage
1 c. chopped onion
3/4 c. chopped green pepper
1 clove, minced
5 c. unpared, sliced zucchini
2 lg. tomatoes, peeled and chopped
1 1/4 c. fresh corn off the cob
1/4 c. chopped parsley
1 1/2 tsp. salt
1 tsp. chili powder
1/4 tsp. pepper
Mozzarella cheese

Brown meat, onion, green pepper and garlic in large skillet. Stir in remaining ingredients. Cook until mixture comes to a boil. Reduce heat to low. Cover and simmer 10 minutes or until vegetables are tender. Top with Mozzarella cheese.
