SPECIAL SWEET POTATO CASSEROLE | |
4 c. hot mashed sweet potatoes 1/3 c. butter 2 tbsp. sugar 2 eggs, beaten 1/2 c. milk 1/3 c. chopped pecans 1/2 c. flaked coconut 1/2 c. brown sugar 2 tbsp. flour 2 tbsp. butter, melted Mix sweet potatoes, 1/3 cup butter and sugar. Beat in eggs and milk. Pour mixture into a 1 1/2 to 2 quart casserole. Combine pecans, coconut, brown sugar and flour; stir in melted butter. Sprinkle mixture over sweet potatoes. Bake in slow (325 F) oven 1 hour. Makes 6-8 servings. |
