CHICKEN IN WHITE WINE 
4 lg. chicken breasts, boned and split
1 tsp. salt
Pepper to taste
Pinch of paprika
Flour as needed
1/2 c. butter
1 c. fresh mushrooms
1/4 c. chopped scallions
1 c. chopped celery
1 clove garlic, sliced thin
1/2 c. white table wine

Sprinkle chicken with salt and pepper and paprika and coat well with flour. Brown in 1/4 cup butter. Remove chicken and add remaining butter. Brown mushrooms, scallions, celery and garlic. Return chicken to pan, add wine and simmer slowly for 45 minutes, or until tender.

Serves 4. Good with a chilled white wine, preferably the one the chicken was cooked with.
