CHICKEN RICE CASSEROLE 
2/3 c. milk
1/2 c. chicken fat or butter
1/3 c. flour
2 tbsp. pimento
1 tsp. salt
1 1/2 c. cooked rice
1 c. chicken broth or 1 bouillon cube in hot water
2 c. cut up done chicken
1 c. mushrooms sliced, drained
1/4 c. almonds
Broccoli, cooked (optional, it's good in there though)

Heat oven to 350 degrees. Melt fat; blend in flour and cook until bubbly. Remove from heat. Add milk and broth. Heat to boiling. Stir in remaining ingredients. Put in baking dish 10x6x1 1/2 or 1 1/2-quart casserole dish. Bake uncovered 40-45 minutes. In boiling water add 1 1/2 cups rice. It will make about 3 cups.
