CELERY TORTA 
1 head lettuce
1 head celery
2/3 c. dry bread crumbs
2 c. grated cheese
4 eggs
1/2 c. milk
1 onion
1 clove garlic
1 handful parsley
2-3 tsp. olive oil
1 tsp. salt
1 tsp. (to taste) pepper

Cook celery and lettuce until tender, drain and chop fine. Put in large bowl. Fry onions and garlic in 2 tablespoons olive oil until tender. Add parsley and simmer 2 minutes. Add onion mixture to chopped vegetables. Beat eggs and grated cheese, bread crumbs and milk. Add to ingredients in bowl. Bake in square or oblong pan in moderate oven for 45 minutes or until firm.
