ARROZ CON QUESO 
3-4 c. cooked rice
1 pt. sour cream
3/4 lb. Monterey Jack cheese, grated
2 sm. cans diced green chilies, drained
1/2 c. Cheddar cheese

In a 1 quart casserole dish (layer twice), layer ingredients in the following order: Rice, sour cream and chilies (mixed together, Monterey Jack cheese.

Bake at 350 degrees for 1/2 hour. Top with cheddar cheese and broil about 2-3 minutes, until cheese is melted.
