YAM GINGERBREAD 
1 c. sifted all purpose flour
2 tsp. baking powder
1 tsp. ground ginger
3/4 tsp. ground cloves
1/2 tsp. salt
1 c. mashed sweet potatoes, cooled
1/3 c. butter
1/2 c. sugar
1/4 tsp. baking soda
2 eggs
1/2 c. light molasses

Sift together flour, baking powder, ginger, cloves and salt. Set aside. Combine sweet potatoes and butter, mixing well. Add sugar and baking soda. Beat in eggs one at a time. Add flour mixture alternately with molasses; mix well.

Turn batter into greased (8 x 8 x 2 inch) baking pan. Bake in preheated 350 degree oven for 1 hour. Cool in pan 10 minutes before turning out on wire rack to cool. Makes 9 servings.
