PICKLED STRING BEANS 
1 lb. string beans (stem end trimmed)
1-2 hot dried chili pepper pods (optional)
1 tsp. minced garlic for each jar
3 1/2 c. water
2 1/4 c. vinegar
6-7 tbsp. salt

You need a tall jar so you can leave the string beans whole. Wash and trim beans.

Discard any beans with blemishes.

Add pepper pod and garlic. Dissolve salt in water. Add vinegar. Fill jars. Ready in about 14 days.

Pack into jars. Process for 10-15 minutes in a boiling water bath or store in the refrigerator until ready to use.

Hi David,

The refrigerator, the vinegar, and the salt are sufficient to keep them for 3 weeks or longer. If you want to store them in the refrigerator indefinitely, you might prefer to process them also.

When stored in the refrigerator without any processing, they will keep for about the same length of time as a jar of store bought pickles keeps in the refrigerator once opened.
