BANANA SPICE CAKE 
2 1/2 c. sifted plain flour
1 2/3 c. sugar
1 1/4 tsp. baking powder
1 1/4 tsp. baking soda
1 tsp. salt
1 1/2 tsp. cinnamon
2/3 c. hydrogenated vegetable shortening
3/4 tsp. nutmeg
1/2 tsp. cloves
2/3 c. buttermilk
1 1/4 c. mashed bananas (3 med.)
2 eggs, unbeaten

Sift all dry ingredients into large bowl. Add shortening, buttermilk and mashed bananas. Beat at low speed for 2 minutes. Add eggs, beat 1 minute. Turn batter into two 9-inch greased layer cake pans. Bake in 350 degree oven for 30 to 35 minutes.

SEA FOAM FROSTING:

Combine:

1 1/2 c. brown sugar, firmly packed
5 tbsp. water
Dash of salt

Put in top of double boiler; place over rapidly boiling water. Beat at high speed until frosting stands in peaks. Remove, add 1 teaspoon vanilla.
