BANANA BREAD | |
1/2 c. butter 3/4 c. brown sugar 1 egg 1 c. whole wheat flour 1/2 c. unbleached white flour 1 tsp. baking soda 3/4 tsp. salt 1 1/4 c. mashed ripe bananas 1/4 c. buttermilk or yogurt 1 tsp. cinnamon 1/2 c. walnuts (optional) 1. Preheat oven to 350 degrees. 2. Cream butter and sugar together until very light and creamy. Beat in eggs. 3. Sift together flour, baking soda and salt. Combine bananas and buttermilk, stirring just enough to mix. 4. Add dry ingredients alternately with banana mixture to butter mixture, stirring just enough to combine well. 5. Turn into an oiled and floured 9 x 5 inch loaf pan. 6. Bake 50-60 minutes or until done. Cool in pan 10 minutes. Remove from pan and finish cooling. Yield: one loaf. |
