GREEN RICE 
1 med. onion
1 clove garlic, run through grinder
2 eggs
2 c. milk or 1 lg. can evaporated milk
1 lb. grated sharp cheese
1/4 c. salad oil
1 can parsley (1/4 oz.)
1 1/2 c. rice (regular - not instant)
Salt and pepper to taste

Mix together onion, garlic, milk, egg, salt and pepper. Cook rice and add to milk mixture. Mix in cheese, parsley and salad oil. Pour into greased casserole. Bake for 1 hour at 350 degrees. Do not cover.
