PANFRIED BEEF LIVER WITH MUSTARD 
1/4 c. flour
1/2 tsp. salt
1/8 tsp. pepper
1 lb. beef liver, sliced 1/2 inch thick
2 tbsp. oil
2 tbsp. butter
2 tsp. your favorite mustard

Mix flour, salt, and pepper. Coat liver. In large, heavy skillet, heat butter and oil. Cook liver quickly, turning once, until browned and done as desired. Brush immediately with mustard. Perfect accompaniments? - sauteed sliced potatoes and onions and minted peas.
