CAESAR SALAD 
4 tbsp. olive or salad oil
2 tbsp. lemon juice
1/8 tsp. coarsely ground pepper
1 clove garlic, minced
1/4 c. fresh grated Parmesan cheese
1 can anchovies
3 tbsp. wine or cider vinegar
1 tsp. salt
1 head lettuce
1 egg
1 1/2 c. crisp croutons

Combine oil, vinegar, lemon juice, salt and pepper in bottom of bowl. Break lettuce into another bowl. Place egg in boiling water in small pan, cover, remove from heat and let stand for 1 minute to coddle. Remove from water at once. Top greens with Parmesan cheese and anchovies, break coddled egg over all. Toss salad with servers, spooning from bottom until greens are covered. Sprinkle with croutons.
