ZUCCHINI DROP COOKIES | |
1 c. grated zucchini, drained well 1 tsp. baking soda 1 c. sugar 1/2 c. butter 1 egg 2 c. all-purpose flour 1 tsp. cinnamon 1/2 tsp. ground cloves 1 tsp. salt 1 c. chopped nuts 1 c. raisins Mix together zucchini, baking soda, sugar, butter and egg. Sift together flour, cinnamon, cloves and salt. Add to zucchini mixture. When almost blended, stir in nuts and raisins. Drop by teaspoonfuls on greased cookie sheet. Bake in preheated 375 degree oven for about 12-15 minutes. Yields 3 dozen. |
