HUNGARIAN PAPRIKA POTATOES | |
10 med. potatoes, diced or cut in slices 1 lg. onion, finely chopped 6 tbsp. oil Salt to taste 2 tbsp. Hungarian sweet paprika 1 to 2 c. water 1 green pepper, cut in lg. pieces 1 lg. can tomatoes or 1 (16 oz.) can tomato sauce 1 lb. hot dogs or Polish sausage Prepare potatoes; may leave skins on if desired. Saute onion in oil until pale yellow. Take the pot off the heat, cool it for a minute before adding paprika, then potatoes, salt and water. Bring to a boil; reduce heat to low and continue cooking until potatoes are half cooked. Add the green peppers and tomatoes or sauce and continue cooking until potatoes are almost done. Add hot dogs or Polish sausage and finish cooking. Serves 6 to 8. |
