EASY CAMPFIRE VEGGIES 
In aluminum foil, put fresh yellow summer squash, sliced crosswise, white onions, and sliced green peppers. Drizzle olive oil on top of all, a bit of butter if desired, then sprinkle all with plenty of grated Parmesan cheese.

Bake in white hot coals with two layers of aluminum foil for about 20 minutes. Keep an eye on it so it doesn't burn. Can also be done on the barbecue grill. Sprinkle with salt and pepper, then serve directly in the foil.
