BEEF AND POTATO CASSEROLE 
4 med. potatoes
1 lb. ground chuck, ground round, or sirloin
1 lb. can tomatoes
3/4 tsp. oregano
3/4 tsp. salt (optional)
Freshly ground pepper

Grease 2 quart casserole. Arrange diced potatoes in bottom. Sprinkle with 1/4 teaspoon oregano, 1/4 teaspoon salt and some freshly ground black pepper. Crumble ground chuck over potatoes in an even layer. Sprinkle with 1/4 teaspoon more oregano, 1/4 teaspoon salt and some pepper.

Place tomatoes in bowl; break up with fork into 1 inch pieces. Spoon these over meat. Sprinkle with 1/4 teaspoon more of spices. Cover and bake in preheated 400 degree oven for 40 minutes or until meat is brown and potatoes are tender.
