CHEESY RICE CASSEROLE 
1/2 onion, chopped
1/2 pepper, chopped
2 sm. cans mushrooms
1 lg. box regular flavored UNCLE BEN'S® long grain and wild rice
8 oz. American cheese
1 c. milk
1 stick butter

Cook rice as directed and set aside. In saucepan put onion, green pepper and 2 cans of mushrooms. Cook until tender. Add cheese and melt in. In buttered casserole dish, place 1/2 of rice then cheese mixture, then rice and then cheese mixture again. Top with 1 cup of milk. Cover and cook 30 minutes in 350 degree oven. Serves 6 to 8.
