LEG OF LAMB 
Clean leg of lamb and cut into portions, not separating the meat. Cut slits in meat and insert slivers of garlic which have been salted and peppered. Sprinkle the juice of 1 lemon over the meat and top with a stick of melted butter. Sift a little flour over the meat. Preheat oven to 350 degrees and cook for 1 to 1 1/2 hours, turning and basting the meat from time to time.

SAUCE: After the meat is done, remove from pan and allow to cool before trying to slice. Top the sliced meat with a sauce made by putting 1 cup of warm water in the pan in which the roast was cooked. In a small pot warm 2 tablespoons of butter and 2 tablespoons of flour; stir. Strain juices from pan and pour into pot and stir until the sauce thickens.
