VEGETARIAN PUMPKIN SOUP | |
3-4 links vegetarian style sausage 1/2 minced onion 1 clove garlic 1 cup mushrooms 1 15 oz can of pumpkin puree 4 cup vegetable broth 1 cup light cream 1 tbsp. Italian seasoning 1/4 cup grated Parmesan cheese 2 tsp. hot sauce Brown sausage over medium heat and set aside. Cook onion, garlic, mushrooms and Italian seasoning over medium head until soft. Stir in pumpkin puree. Add vegetable broth and let simmer for 20-25 minutes. Add sausage, light cream, Parmesan cheese, and hot sauce, and simmer another 10-15 minutes. Submitted by: Michelle |
