TOMATO PIE 
1 (9") pastry shell
4 med. ripe tomatoes, sliced & slices cut in half
1/4 c. chopped chives or scallion stalks
3/4 tsp. chopped basil or 1/4 tsp. dried basil, crumbled
1/4 tsp. oregano, crumbled
1/4 tsp. salt
1/4 tsp. pepper
1 c. grated Swiss gruyere cheese
1/4 c. mayonnaise

Preheat oven to 425 degrees. Bake pie crust for 5 minutes. Remove from oven, reduce heat to 400 degrees.

Place tomato pieces on bottom of pie shell. Sprinkle tomatoes with chives or scallions, basil, oregano, salt and pepper. Combine cheese and mayonnaise and carefully spread mixture over tomatoes, reach edge of pie crust, seal in tomatoes. Bake 35 minutes until hot and bubbly. Cut in wedges.
