4 hero or French rolls (6 x 2 inches) 1 c. water 1/2 lb. sweet Italian sausage links 2 tsp. salad oil 1 c. chopped onions 1 med. green pepper, diced 1 c. prepared spaghetti sauce 1/8 to 1/4 tsp. oregano 1/8 tsp. pepper 1 garlic clove, crushed 4 oz. Mozzarella cheese cut into 1/4 inch cubes Cut 1/2 inch from one end of each roll; reserve. Hollow out each roll with a knife, leaving a 1/4 inch shell. In medium saucepan, combine water and sausage. Bring to a boil; lower heat and simmer until water has evaporated, about 20 to 30 minutes. Remove from heat and cut sausage into 1/2 inch cubes. In medium skillet, heat oil over medium heat. Add onions and green pepper and saute until onions are translucent. Add and mix sausage, pepper, oregano and garlic. Reduce heat and simmer 5 minutes. Preheat oven to 375 degrees. Mix cheese with sauce and fill rolls. Replace reserved ends and wrap individually in foil. Bake directly on oven rack for 20 minutes. Makes 4 sandwiches, about 695 calories each. |
