ZUCCHINI ROUNDS 
1/3 c. Bisquick
1/4 c. grated Parmesan
1/8 tsp. black pepper
2 eggs, beaten
2 c. grated, unpeeled zucchini
3 tbsp. butter

Grate zucchini. Beat eggs in medium bowl. Add Bisquick, cheese, and pepper to eggs. Stir in zucchini. Melt butter on medium-high heat. Drop tablespoonfuls of batter into butter. Fry until golden brown on both sides. Keep warm in oven until all are cooked.
