APPLE MUFFINS 
1 3/4 c. flour
1/3 c. sugar
3 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1 c. chopped apples (skins may be left on)
1 c. milk
1/4 c. oil
1 egg, slightly beaten

Spoon flour into measuring cup and level off. Pour into large bowl. Add rest of dry ingredients and blend well. Add apples, milk, oil and egg to dry ingredients. Fill greased muffin cups 3/4 full. Bake at 425 degrees for 20 to 25 minutes.
