ENCHILADA RICE 
1 lb. ground turkey
1 pkg. dry enchilada mix
1/4 c. green peppers
1/4 c. onions
1/4 c. red peppers
1 can Rotel tomatoes
2 c. cooked rice
4 oz. shredded cheese

Brown the ground turkey and add the rest of the ingredients. Spread the cheese over the top. Cook for 30 minutes at 350 degrees. Serves a minimum of 4. If serving only 4 count as 4 protein, 1 bread, vegetables are unlimited.

If serving 6 count as 2 and 2/3rds protein, 3/4 bread. If serving 8 2 protein, 1/2 bread.
