EASY CREAM CHEESE CAKE 
3 (8-ounce) packages Philadelphia cream cheese, softened
1 (8-ounce) carton sour cream
1 cup sugar
3 eggs
2 pinches prepared lemon rind
1 to 2 teaspoons lemon extract

Preheat oven to 400°F.

Combine ingredients in a mixing bowl and beat until smooth.

Transfer mixture to a 7-inch spring form pan and place spring form into another pan with a 1/2 inch of water in the bottom.

Bake for 45 to 50 minutes until golden brown. Cool on wire rack.
