POTATO - CHEESE CASSEROLE 
6 med. size white potatoes
2 c. Cheddar cheese, shredded
16 oz. sour cream
1/3 c. onion, chopped
Salt and pepper to taste
6 tbsp. butter, divided into 2 portions

Boil, chill, peel, and cube potatoes. Fold in cheese, sour cream, onion, salt, and pepper. Preheat oven to 350 degrees. Spray a large casserole dish with a vegetable cooking spray. Then dot it with a vegetable cooking spray. Then, dot it with half of the butter. Pour potato mixture into the dish and dot with remaining butter. Bake for 30 minutes.
