ITALIAN SAUSAGE WITH FRESH BABY
ARTICHOKES
 
Olive oil
Italian sausage
1 lg. onion, chopped
Stewed tomatoes
1 tsp. cinnamon
1/2 c. red cooking wine
Fresh baby artichokes, cleaned & cut in halves

Cover bottom of frying pan with olive oil. Cut sausage in three pieces. Brown in frying pan. Remove sausage and set aside. Saute onion. Put sausage and onion in a large pot. Add stewed tomatoes. Add cinnamon and wine. Simmer for 1/2 hour. Add the artichokes to tomatoes and sausage. Simmer all of the above for 1/2 hour or until the artichokes are cooked. May serve with rice, polenta or potatoes.
