COCOA VELVET CAKE 
1 3/4 c. flour
1/2 tsp. baking soda
1 tsp. salt
2/3 c. shortening
1/2 to 3/4 c. eggs (2 lg.)
1 1/4 tsp. baking powder
1 1/2 c. sugar
6 tbsp. cocoa
1 c. buttermilk
1/4 tsp. red food coloring

Add together in a bowl the flour, baking powder, soda, sugar, salt, and cocoa. Add the shortening and buttermilk. Beat for 2 minutes at medium speed. Add the eggs and food coloring. Beat for 2 minutes at medium speed. Pour into 2 prepared cake pans and bake at 350 degrees for 30 to 35 minutes.
