CARAMEL APPLE SALAD 
4 med. or 3 lg. Granny Smith apples, sliced
8 oz. dry roasted peanuts, crushed
1 (20 oz.) can crushed pineapple, drained

SAUCE:

2 c. powdered sugar
2 eggs
1 c. softened butter
1 (12 oz.) Cool Whip

Beat sauce ingredients for 5 minutes until creamy. Blend in Cool Whip. Add apples, nuts and pineapple.
