MEXICAN CORNBREAD 
1 1/2 c. cornmeal
1/2 c. oil
1 1/2 tsp. salt
1/2 tsp. baking soda
1 can cream style corn
2 eggs
1 c. milk
1 1/2 lbs. hamburger
1/2 moon grated cheddar cheese
4 jalapeno peppers, diced
1 lg. onion, diced

Brown and drain hamburger. Mix cornmeal, oil, salt, soda, milk, corn and egg together. In a greased 10" iron skillet put 1/2 cornbread mixture. Then put meat, onions, peppers and cheese. Pour rest of cornbread mixture on top. Bake at 400 degrees for 45 minutes to 1 hour until golden brown.
