LINENHALL BOXTY 
4 med. potatoes
1 egg (slightly beaten)
4 tbsp. cooking oil
1 onion
2 tbsp. flour
Salt and pepper to taste

Peel and grate potatoes and onion. Add egg, flour, salt and pepper and mix well. Meanwhile, heat oil in heavy skillet. Drop mixture by tablespoon into skillet and spread out slightly to form a round. Fry until golden brown, turning once, about 3 to 4 minutes on each side. Repeat with remaining mixture. Served warm with butter or jam.
